Every year around this time my phone gets busy with the same kind of call. A hotel owner tells me the weddings are booked back to back from November, but the banquet, kitchen and housekeeping teams are still short of people. My honest answer is always the same: seasonal hiring for hotels works best when it starts before the rush, not during it. In this guide I'll walk you through how I would plan hotel staffing for wedding season, the smart way of hiring temporary hotel staff, where banquet staff hiring usually goes wrong, what changes in winter season hotel recruitment for hill destinations, and a simple routine for onboarding seasonal hotel staff so they are useful from their very first event.

Why Seasonal Hiring for Hotels Must Start Before the Rush
In peak season, every hotel in your city is looking for the same people at the same time. Experienced banquet waiters, cooks and housekeeping attendants get picked up early. Start two days before a big wedding and you take whoever is left, and your guests notice.
Starting early gives you three things: a better choice of candidates, time to check references and time to train people before the pressure begins.
Step 1: Work Out Your Numbers from Your Bookings
Don't hire on gut feeling. Sit with your sales and banquet team and list every confirmed event and the expected occupancy for each week of the season. Then ask, department by department:
- How many extra hands do we need on our busiest day, and on a normal day?
- Which shifts are hardest to cover: late-night banquets, early breakfasts, room turnovers after check-out?
- Which roles can be shared across departments, and which need a trained specialist?
This sheet becomes your seasonal staffing plan, so you don't over-hire for quiet weeks or under-hire for the big ones.
Step 2: Decide Where Temporary Hotel Staff Fit Best
Keep key roles with your permanent team
Guest-facing leadership roles like the front office supervisor, banquet captain, sous chef and floor supervisor should stay with people who know your property and your standards.
Use temporary staff where training is quick
Hiring temporary hotel staff works well for banquet service, stewarding, housekeeping support, kitchen helpers, runners and event setup. These roles still need care, but a willing person can learn your way of working within a few shifts when someone guides them properly.
Step 3: Banquet Staff Hiring Without the Last-Minute Panic
Banquets are usually the first department to feel the season. These are the sources I've seen work again and again:
- Your past seasonal staff. People who did well last season already know your hotel. Call them first.
- Referrals from your own team. Good employees tend to recommend people they trust, because their own name is attached.
- Freshers and part-time workers in your city who want event experience and are happy to learn.
- An online hospitality job portal. Post clear, honest vacancies on a hospitality job portal for hotel employers so candidates can find you while you focus on operations. If you need help writing the post itself, use my hotel job description template.
Whatever the source, be clear in the vacancy about dates, shift timings, meals, accommodation if any, and how and when people will be paid. Clarity at the start prevents drop-outs in the middle of the season.

Step 4: Screen Fast, but Don't Lower Your Standards
Speed matters in peak season, but one careless hire can spoil an event. Keep screening short and practical:
- A ten-minute phone call to check availability for the full season, travel distance and past experience.
- A short trial shift or practical task: laying a table, carrying a tray, making a bed to your standard.
- One reference call for anyone joining a guest-facing role.
A trial shift tells you more about attitude than any long interview.
Step 5: Onboarding Seasonal Hotel Staff in 48 Hours
Seasonal staff don't need a week-long induction, but they do need a proper welcome. My simple 48-hour routine:
- Day 1: Property tour, grooming standards, uniform, locker, meal timings, emergency exits, basic hygiene and safety rules. Introduce them to one buddy from the permanent team.
- Day 2: Shadow the buddy on a real shift. End with a five-minute chat: what was confusing, what do they need?
- Before every event: A short briefing by the captain on the menu, the flow of service and the host family's special requests.
When people feel looked after, they come back for the next event and often for the next season too.
Winter Season Hotel Recruitment in Hill Destinations
If your property is in the hills, as many are here in Uttarakhand, winter season hotel recruitment brings extra questions. Candidates from the plains will ask about staff accommodation, heating, meals and travel. Answer these honestly in your job post. If you are looking locally, keep an eye on people browsing hotel jobs in Uttarakhand, because candidates who already live nearby often settle in faster.
After the Season: Keep Your Best People Close
When the last wedding is done, don't just say goodbye. Thank people properly, settle their dues on time and keep a short list of your star performers with their phone numbers. Some may fit a permanent opening later, and the rest are your first calls next season. That one list can make next year's seasonal hiring for hotels much easier. FAQ: Seasonal Hiring for Hotels
How early should a hotel start seasonal hiring?
As soon as your event calendar and occupancy forecast are reasonably clear. Starting early gives you more choice and time for training. Leaving it to the last week usually means settling for whoever is free.
Should seasonal staff get a written agreement?
Yes. Put the dates, role, shift timings, pay, meals and accommodation in writing, and follow the labour rules that apply in your state. Clear terms protect both the hotel and the staff member.
